So you think you are done with pumpkins?

…not so fast! Pumpkins are not just Thanksgiving and Halloween treats.
MP900448309[1]Pumpkins are an excellent source of antioxidants, vitamins and minerals all year round.

Besides being a storehouse of antioxidants, pumpkins have lots of other health benefits… they are high in dietary fiber, are low in calories and have no saturated fats or cholesterol.

Pumpkins and the rest of the squash family are also low maintenance foods…  easy to store and prepare. You can bake, boil, steam and even microwave them.

For ideas and recipes check out one of TPL's books below. And don't forget the yummy pumpkin seeds… they are an excellent source of iron and are rich in protein. They make a tasty and healthy snack as long as you stay away from too much salt… instead flavour them with allspice, cinnamon, nutmeg, cardamon…or experiment to your palate's delight.
