Get a Healthy Start to the School Year

I must admit I am dreading the beginning of the school year—getting four kids off to school each morning is not a fun or relaxing way to start the day.   I can handle preparing a healthy breakfast—oatmeal, eggs, French toast or pancakes.  I know that breakfast is important for everyone and especially for children.  But please, a healthy lunch too??

For lunch, I rotate bagels, wraps and leftovers… spaghetti, anyone?  But it is way too easy to throw in store-bought snacks.  You know the ones I mean–they are individually wrapped in bright coloured packaging.   When the begging and pleading for Fruit Roll-ups gets to be too much, I whip up a batch of fruit leather. They are so yummy that even I eat them.  Here is an easy recipe for raspberry fruit leather, courtesy of Tracey's Culinary Adventures
