What Is That?!
While reading Chew I got to thinking about those ingredients that just overpower the taste of your dish. Have you ever tried making a dish and when you were done it tasted like one thing, not even somehing you liked? There are some spices and herbs that do just that. I've had that happen on a few occasions with strong spices like clove and aniseed.
Learning to use the right amount of spice is a tricky thing. A good rule of thumb is to start small and keep tasting, you can always add more but you can't take it out once it's in. I am also a staunch beleiver in properly seasoned meats. Letting your meat, poultry or fish sit in a marinade for some time allows the flavors of the spices to mix with your meat, etc. In the same way, when cooking vegetables, cooking the herbs and spices in a little oil before adding the veggies brings out the flavor of the spices and gives your dish a lovely fragrance and taste.
All that said, I would like to hear about your spicy experiences. What do you like to taste in your food and what don't you like? Is there something that just makes you want to gag if you can'taste it?

I do like spice, but if you ever put a little more, you can always put in some water or yogurt (depending on what you’re making) to make it less spicy. I just made a curry this week and put way too much spice accidentally, and burned my tongue.
And cardamon pods definately make me gag! They’re found in a lot of south asian and indian dishes, and we eat those, ekh!
I hate cardamom pods!! It ruins your whole dish if u bite into one.
Yesss! Cardamon pods are the worst. I always pick them out of my food.
Augh! Agreed! I hate biting into a cardamon pod. It’s like crunching down on a weird gross bug.

That is gross. I tried using curry once, let’s just say I was totally wrong with this one. LOL
Never use too much paprika. That’s all I’m saying.
